Boursin Baked Potatoes
- 4 large potatoes, scrubbed
- - salt
- 4 oz. Boursin cheese
- - salt and black pepper, to taste
- 4 oz. ham, diced or 8 oz. cooked broccoli
- 2 oz. shredded Cheddar cheese
Rub potato skins with salt. Bake in a preheated 400° oven until soft (about 1 1/2 hrs.). Cut potatoes in half; scoop out cooked potato, leaving potato skins intact. Place potato skins on a baking sheet. Using a hand potato masher, mash potato until smooth; add Boursin, blending until combined. Season with salt and pepper to taste. Place your choice of filling in base of potato skin. Top each with potato mixture, smoothing over tops with fork; sprinkle with cheese. Return to oven until heated through and brown on top (about 15 min.).
