Garlic and Thyme Grilled Baked Potato

Ingredients: 
  • 2 garlic cloves, peeled, crushed
  • 4 tbs. butter, room temperature
  • 8 Yukon Gold potatoes, washed
  • 4 sprigs fresh thyme
  • - kosher salt and fresh cracked black pepper, to taste
Instructions: 

Mix garlic and butter in bowl; season with pepper. Set aside. Cut each potato into 8 slices; coat each slice with butter; reassemble each potato on a piece of foil. Place thyme sprigs on top and close foil. Lay wrapped potatoes on cooler side of the grill for 1 to 1 1/2 hr., depending on their size, turning every now and then until tender. If using a gas grill, put potatoes at back of grill over low heat. Add salt and pepper to taste; serve.
