Garlic Chive Mashed Potatoes

Serves 8
  • 1 ½ lbs. Kowalski's Russet Potatoes, peeled, quartered
  • 2 cloves garlic, peeled, quartered
  • 1 tsp. salt
  • 1/4-1/3 cup hot milk
  • 2 tbsp. butter, room temperature
  • 1 tbsp. chopped fresh chives

Place potatoes and garlic in a large saucepan; cover with cold water and sprinkle with salt. Bring to a boil over high heat; reduce heat to medium. Cover and continue cooking until potatoes are tender when pierced with a fork (15-20 min.); drain. Place pan over low heat just until excess moisture in pan evaporates (1-2 min.). Mash with hand potato masher until no lumps remain. Stir in milk, butter and chives until potatoes reach desired consistency.
