Grilled Sweet Potato Fries

  • 2 lbs. medium sweet potatoes or yams, peeled, cut into quarters
  • 3/4 cup Kowalski's Extra Virgin Olive Oil
  • 1 tbsp. minced garlic
  • 1 tbsp. minced fresh thyme
  • 1 tbsp. minced fresh rosemary
  • 1 1/2 tsp. kosher salt

Microwave sweet potatoes until slightly softened (8-10 min.); slice into 1/2" thick strips. In a large zipper-closure food storage bag, combine remaining ingredients. Add potatoes to bag; turn in bag to evenly coat with oil mixture. Grill over direct heat on a grill preheated to medium in a grill basket or directly on grill rack, lid down, until cooked through (about 25 min.), turning half way through to brown evenly.
