Superfood Stuffing

Ingredients

Superfood Stuffing lives up to its name. It's super rich in vitamin A and a good source of B vitamins and fiber.

1 ½ tsp. Kowalski's Extra Virgin Olive Oil
½ cup chopped yellow onion
1 rib celery, diced
¾ lb. peeled sweet potatoes, in ½" dice
1 Granny Smith apple, peeled and cored, in ½" dice (¾ cup)
8 oz. (about 4 ½ cups) Kowalski's Stuffing Mix
2 eggs, beaten
½ cup low-sodium chicken broth
½ cup dried tart cherries
2 ½ tbsp. chopped raw walnuts, toasted
1 ½ tsp. chopped fresh sage
½ tsp. kosher salt
¼ tsp. freshly ground Kowalski's Black Peppercorns

Directions
  1. Preheat oven to 350°.
  2. In a large sauté pan, heat olive oil over medium heat.
  3. Stir in onion, celery, potatoes and apples; cook, stirring constantly, until sweet potato starts to soften (8-9 min.).
  4. Stir remaining ingredients into onion mixture.
  5. Scoop mixture into an 8x8" glass baking dish sprayed lightly with nonstick cooking spray.
  6. Bake, uncovered, until heated through (about 40 min.).

 

Tasty Tip:

  • You can use Kowalski's Artisan Stuffing in place of Kowalski's Stuffing Mix. Find both seasonally in the Bakery Department.
