Three Bean Chili Con Carne

Serves 12

2 lb. extra-lean ground beef

1 ½ cups chopped onion

1 ½ cups chopped celery

1 tsp. chopped garlic

46 oz. can tomato juice

29 oz. canned diced tomatoes with chiles

29 oz. canned diced tomatoes

1 tbsp. chili powder

2 tsp. salt

2 tsp. cumin

1 tsp. dried basil

1/2 tsp. cracked black pepper

15 ½ oz. can kidney beans, rinsed and drained

15 oz. can black beans, rinsed and drained

19 oz. can cannellini beans, rinsed and drained

- toppings, your choice: sour cream, diced jalapeño peppers, sliced black olives, finely shredded Cheddar cheese, tortilla chips


In a large skillet, brown ground beef with onions, celery and garlic; drain. In a Dutch oven, combine ground beef mixture with remaining ingredients except beans. Simmer over low heat for 1 ½ hrs. Stir in beans just before serving; heat through. Serve with toppings, if desired.
