Three Bean Chili Con Carne

Ingredients: 
  • 2 lb. extra-lean ground beef
  • 1 ½ cups chopped onion
  • 1 ½ cups chopped celery
  • 1 tsp. chopped garlic
  • 46 oz. can tomato juice
  • 29 oz. canned diced tomatoes with chiles
  • 29 oz. canned diced tomatoes
  • 1 tbsp. chili powder
  • 2 tsp. salt
  • 2 tsp. cumin
  • 1 tsp. dried basil
  • 1/2 tsp. cracked black pepper
  • 15 ½ oz. can kidney beans, rinsed and drained
  • 15 oz. can black beans, rinsed and drained
  • 19 oz. can cannellini beans, rinsed and drained
  • - toppings, your choice: sour cream, diced jalapeño peppers, sliced black olives, finely shredded Cheddar cheese, tortilla chips
Instructions: 

In a large skillet, brown ground beef with onions, celery and garlic; drain. In a Dutch oven, combine ground beef mixture with remaining ingredients except beans. Simmer over low heat for 1 ½ hrs. Stir in beans just before serving; heat through. Serve with toppings, if desired.
