Lentil Chili

Ingredients: 
1 tbsp. Kowalski's Extra Virgin Olive Oil
1 1/2 cups chopped onion
1 1/2 cups chopped celery
1 tsp. chopped garlic
1 (46 oz.) can tomato juice
2 (14.5 oz.) cans diced tomatoes with green chilies
2 (14.5 oz.) cans diced tomatoes
1 tbsp. chili powder
2 tsp. salt
2 tsp. cumin
1 tsp. dried basil
1/2 tsp. coarse ground black pepper
1 1/2 cups lentils, soaked, rinsed, drained
Instructions: 

In Dutch oven, heat olive oil over medium heat sauté onions, celery and garlic. Stir in remaining ingredients except toppings. Simmer over low heat for 1 1/2 hrs.
