Lentil Chili

Ingredients: 
  • 1 tbsp. Kowalski's Extra Virgin Olive Oil
  • 1 ½ cups chopped onion
  • 1 ½ cups chopped celery
  • 1 tsp. chopped garlic
  • 46 oz. canned tomato juice
  • 29 oz. canned diced tomatoes with green chiles
  • 29 oz. canned diced tomatoes
  • 1 tbsp. chili powder
  • 2 tsp. salt
  • 2 tsp. cumin
  • 1 tsp. dried basil
  • 1/2 tsp. coarse ground black pepper
  • 1 ½ cups lentils, soaked, rinsed and drained
Instructions: 

In a Dutch oven, heat olive oil over medium heat; sauté onions, celery and garlic. Stir in remaining ingredients; simmer over low heat for 1 ½ hrs. Serve immediately.
