Three Bean Turkey Chili

Ingredients: 
  • 1 lb. ground turkey
  • 1 cup chopped onion
  • 2 tsp. minced garlic
  • 1 tbsp. chili powder
  • 1 ½ tsp. salt
  • 1 tsp. ground cumin
  • 1 tsp. dried oregano leaves
  • 1/2 tsp. coarse ground black pepper
  • 56 oz. canned diced tomatoes
  • 29 oz. canned tomato sauce
  • 1 ½ cups water
  • ¼-½ tsp. hot pepper sauce (optional)
  • 19 oz. canned cannellini beans, drained
  • 16 oz. canned dark red kidney beans, drained
  • 15 oz. canned black beans, drained
  • - toppings, to taste: sour cream and shredded Cheddar cheese
Instructions: 

In a large skillet, cook turkey, onion and garlic until turkey is thoroughly cooked (8-10 min.). In a large stockpot, combine chili powder, salt, cumin, oregano, pepper, tomatoes, tomato sauce, water and hot pepper sauce. Bring to a boil; reduce heat to low. Simmer, covered, for 1 hr. stirring occasionally. Stir in beans; continue cooking until heated through (about 15 min.). Top each serving with sour cream and shredded Cheddar cheese, if desired.
