Mini Apple Galettes with Italian Caramel Cream
- 1/2 cup flour
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 4 tbsp. firm unsalted butter, divided
- 4 cups sliced Haralson apples (about 4 apples)
- 2 1/2 tbsp. Kowalski's Vanilla Sugar
- 1 egg
- 1 tsp. water
- 1 (17.3 oz.) pkg. puff pastry sheets, thawed
- 1 (8 oz.) carton mascarpone cheese
In small bowl, combine flour, brown sugar and granulated sugar; set aside. In separate bowl, combine apples and vanilla sugar; set aside. In small bowl, whisk together egg and water; set aside. Lightly flour counter; unfold both sheets of puff pastry. Roll each into a 12x12" square. Cut 4 (6") circles from each sheet; arrange on parchment lined baking sheet. Brush each circle with egg and water mixture. Spoon mounded 1/2 cup apple filling onto center of each circle. Sprinkle 2 tbsp. crumb topping over apples; dot each with 1/2 tbsp. butter cut into pieces. Fold pastry up onto fruit, pleating and lightly pressing the dough to fit. Brush edges of pastry with egg mixture to hold together. Bake in a preheated 350° oven until golden brown (28-30 min.). Serve immediately with a dollop of mascarpone.
