Italian Parmigiano-Reggiano Soup

Serves 6-8
Ingredients: 
  • 6-8 cups Parmigiano-Reggiano Stock

  • 2 cups shredded cooked chicken

  • 2/3 cup sun-dried tomatoes, thin sliced

  • 1 ½ cups chopped fresh spinach

  • 1 cup shredded carrots

  • 1 cup Italian gnocchetti

  • - minced garlic, if desired

  • - shredded Parmigiano-Reggiano

Instructions: 

In a large stockpot, combine Parmigiano-Reggiano Stock with next 7 ingredients (through garlic); simmer (30-60 min.). Garnish with shredded Parmigiano-Reggiano.
