Italian Parmigiano-Reggiano Soup

Serves 6-8

6-8 cups Parmigiano-Reggiano Stock (see instructions below)

2 cups shredded cooked chicken

2/3 cup sun-dried tomatoes, thin sliced

1 ½ cups chopped fresh spinach

1 cup shredded carrots

1 cup Italian gnocchetti

- minced garlic, if desired

- shredded Parmigiano-Reggiano


In large stockpot, combine Parmigiano-Reggiano Stock (click here for recipe) with next 7 ingredients (through garlic); simmer (30-60 min.). Garnish with shredded Parmigiano-Reggiano.
