Muir Glen® Tandoori Garbanzo And Tomato Stew

Serves 4
  • 1 tbsp. olive oil
  • 1 medium onion, chopped (1/2 cup)
  • 3 cloves garlic, finely copped
  • 1 tbsp. finely chopped ginger root
  • 1 tbsp. garam masala or curry powder
  • 1 (28 oz.) can Muir Glen® Organic Fire Roasted Diced Tomatoes, chopped, drained
  • 1 (28 oz.) can garbanzo beans, rinsed, drained
  • 1/2 cup finely chopped fresh cilantro
  • 1 tbsp. fresh lemon juice
  • 1 cup plain yogurt (if desired)

In 2 qt. saucepan, heat oil over high heat. Cook onion, garlic, ginger root and garam masala in oil until onions are light brown (about 2 min.). Stir in tomatoes with juice. Simmer 5 min., stirring occasionally. Stir in garbanzo beans; simmer 15 min. longer, stirring occasionally and moistening with a little water if necessary. Stir in cilantro, lemon juice and salt. Garnish with a dollop of yogurt and additional chopped cilantro, if desired.
