Portabella Mushroom Soup

Serves 4

2 Monterey Portabella Mushrooms, chopped

1 tbsp. olive oil

2 tbsp. garlic, chopped

2 carrots, finely chopped

2 stalks celery, finely chopped

2 yellow onions, finely chopped

1 yellow bell pepper, diced

1 bunch parsley, chopped

1 bunch sage, chopped

1 qt. chicken or vegetable stock

1/2 cup dry white wine

1 cup cream

- salt and pepper, to taste

- fresh chives, chopped


Sauté first 9 ingredients until onion is translucent; deglaze pan with white wine and stock. Bring to a boil over medium heat; add cream. Simmer 15 min.; season to taste with salt and pepper. Garnish with chopped chives, if desired.
