Bratwurst Soup

Serves 6
  • 3 tbsp. olive oil

  • 16 oz. pkg. (1 ½ cups) Kowalski's Fresh Soup Mix

  • 1/4 cup flour

  • 6 cups chicken stock

  • 12 oz. beer

  • 1 lb. potatoes, peeled and diced

  • 1/2 tsp. ground mustard

  • 1/2 tsp. garlic powder

  • 1/2 tsp. celery seed

  • 3/4 tsp. kosher salt

  • 1/4 tsp. fresh ground black pepper

  • - dash cayenne pepper or hot sauce, to taste

  • 1/2 cup milk

  • 1 tsp. Worcestershire sauce

  • 2 cups Kowalski's Cheddar Cheese, grated

  • 3 bratwurst sausages, cooked and sliced


In a large saucepan over medium heat, heat oil; cook soup mix until softened (about 10 min.). Whisk in flour; cook 1 min. Add stock, beer and potatoes; stir in mustard, garlic powder, celery seed, salt, black pepper and cayenne. Bring soup to a boil; reduce to simmer. Cook until potatoes are tender (about 15 min.). Add milk and Worcestershire sauce; heat through until completely hot but do not boil. Remove from heat and add cheese slowly, stirring until melted. Stir in sausages; season to taste and serve immediately.

Good to Know: Find Kowalski's Fresh Soup Mix in the Produce Department with other prepared produce. Or you can use the same amount of finely chopped mixed vegetables, such as carrots, celery and onions.
