Grilled Salmon Pesto Pizza
SMOKED SALMON AND PESTO PIZZA
Drizzle prepared "crust" of your choice (such as 1 Golden Home Ultra Crispy & Ultra Thin Pizza Crust, 2-3 Flatout Wraps, Toufayan Whole Wheat Flatbreads or Stonefire Tandoori Naans) with olive oil; sprinkle with salt and pepper and crushed red pepper flakes. Top with a mixture of 1/2 cup fresh ricotta cheese and 3 tbsp. Kowalski's Pesto; sprinkle with toasted pine nuts. Grill pizzas 1-2 at a time (as space permits) directly over high heat, lid down, rotating crust 90° when dark grill marks form (2-3 minutes total). Slide pizza to unlit (cool) side of grill. Let stand, lid down, until cheese is melted and bubbly (about 2 minutes). Top with 3 oz. flaked Kowalski's Smoked Salmon (skin discarded); scatter with basil leaves and drizzle with additional olive oil, if desired.
