Kimchi (sometimes spelled kimchee) is a staple side dish in Korea, similar to but less sour than sauerkraut. It's traditionally made with fermented vegetables, most notably cabbage, radish and carrot. It's seasoned with things like garlic, ginger and peppers and can be very spicy to quite mild.
