Isabel Street Heat is a small, family-owned business based in Saint Paul. Each uniquely fermented batch of hot sauce is made with locally sourced, all natural ingredients – no added colors, fillers or additives – and is bottled by hand.
In 2005, Tony and Leslie Stoy purchased a house in the West Side of Saint Paul. A good friend lived on the same street and wanted to make some homemade hot sauce for holiday gifts with peppers from her garden. She knew Tony had spent time in New Orleans as a pastry and sous chef throughout high school, so she consulted him for advice. Together they made about four cases of fermented hot sauce and gave it away to friends and family.
One day, Tony brought a bottle to work to use with his lunch. A few of his co-workers were hanging around when he put the Thai Chili Hot Sauce on his pizza. That was followed by, "Hey, can I try some?" Then, "Where did you get this? It's really good! Can I buy a bottle?" It was the beginning of a yearly ritual, every year making a little more than the previous year.
And that's how Isabel Street Heat started: one friend asking for some help making hot sauce and some positive feedback from coworkers.
In September 2014, Isabel Street Heat became fully licensed, and production of the fermented sauces began in a commercial kitchen. Within a year and half, there were two companies distributing Isabel Street Heat Hot Sauces. They can currently be found at over 70 stores and restaurants in the Midwest, including all Kowalski's locations.
