Pomegranate-Champagne Punch

Serves 12

Ingredients

½ cup water
½ cup sugar
2 bottles (750 ml each) chilled Brut Champagne
1 ½ cups white rum
1 ¼ cups pomegranate juice
1 large lemon, thinly sliced
- pomegranate seeds, to taste
- fresh mint leaves, to taste
1 ice block

Directions
  1. In a small saucepan, bring ½ cup water and sugar to a boil, stirring until sugar dissolves.
  2. Reduce heat; simmer for 5 min.
  3. Remove from heat; cool syrup completely.
  4. Combine Champagne, rum and pomegranate juice in punch bowl; add enough syrup to sweeten to taste.
  5. Mix in lemon slices, pomegranate seeds and mint leaves.
  6. Add ice block to bowl.
