Luscious Lemon Bars

Makes 24

Ingredients

2 ¼ cups flour, divided
¾ cup (1 ½ sticks) Kowalski's Butter, softened
½ cup chopped pecans
3 cups superfine sugar
6 eggs
1 ½ tsp. baking powder
¾ tsp. kosher salt
¾ cup Kowalski's Freshly Squeezed Lemon Juice (from the Produce Department)
2 tbsp. finely grated lemon zest (from about 2 medium lemons)
- Lemon Glaze (recipe below)

Directions
  1. Preheat oven to 350°.
  2. In a mixing bowl, cream together 1 ¼ cups flour and butter until fluffy.
  3. Stir in pecans.
  4. Press mixture into the bottom of a 9x13" baking pan; bake in preheated oven until lightly browned (about 15 min.).
  5. In a clean mixer bowl, beat superfine sugar, remaining flour, eggs, baking powder, salt, juice and zest on medium speed for 2 min.
  6. Pour lemon filling over crust; continue baking until filling is set (28-32 min.).
  7. Remove from oven; cool completely.
  8. Frost bars with lemon glaze; cut into squares for serving.

 

LEMON GLAZE: In a clean mixing bowl, combine 1 ½ cups sifted confectioners' sugar, 2 tbsp. freshly squeezed lemon juice (from about 1 medium lemon), 1 tbsp. softened Kowalski's Butter and ¼ tsp. Kowalski's Organic Madagascar Vanilla Extract until smooth.
