In a large mixing bowl, mix together breadcrumbs, ½ of the Parmesan, salt and pepper. Drizzle crumb mixture with oil; toss evenly to coat. Mix parsley into breadcrumbs; set aside. Place chicken evenly in the bottom of a 2 to 2 ½ quart baking dish (round or square); layer evenly with sauce, mozzarella and remaining Parmesan. Sprinkle crumbs evenly on top. Bake in a preheated 375° oven until crumbs are golden and crispy and dish is thoroughly hot throughout (about 25 min.). Remove from oven and let stand for 5 min. Serve with your choice of bread or pasta.
