Remove core from lettuce; separate leaves. Wash lettuce and greens in ice-cold water; drain thoroughly in a salad spinner until very dry. Toss greens with dressing to taste in a large salad or mixing bowl. Top salad with remaining ingredients; drizzle with additional dressing to taste.
HONEY-POPPY DIJON DRESSING: In a medium mixing bowl, whisk together ⅓ cup Velvet Bees Honey Butter (from the Specialty Cheese Department), 3 tbsp. gluten-free Dijon mustard, 2 tbsp. Kowalski's Freshly Squeezed Orange Juice, 2 tbsp. rice vinegar, 1 ½ tsp. poppy seeds and ½ tsp. lemon juice. Season to taste with kosher salt and freshly ground Kowalski's Black Peppercorns. Store in the refrigerator, covered, for up to 3 days. Makes about 1 cup.
