Pickled Sweet Corn Relish

Makes about 2 pints

Ingredients

12 oz. Pictsweet Deluxe Super Sweet Frozen Corn
¾ cup finely chopped celery
½ cup finely chopped red pepper
¼ cup finely chopped red onion
½ cup apple cider vinegar
1 ¼ cups sugar
¾ tsp. dry mustard
½ tsp. mustard seeds
¼ tsp. kosher salt
¼ tsp. celery seeds
¼ tsp. ground turmeric
¼ tsp. crushed red pepper flakes

Directions

Combine all ingredients in a large saucepan; stir. Bring to a boil over high heat. Reduce heat to low; simmer 25 min., stirring occasionally. Let relish cool at room temperature at least 1 up to 3 hrs. before storing in the refrigerator, covered, up to 5 days.
