Blue Cheese Fondue

Serves 6
  • 1 tsp. cornstarch
  • 1/2 cup sweet white wine (Gewürztraminer or Riesling), divided
  • 1 lb. St. Pete's Select Blue, Maytag Blue or Point Reyes Blue Cheese, crumbled
  • - dippers, your choice: cooked beef tenderloin, French baguette cubes, Bosc pear slices, steamed asparagus, seared endive

In a small cup, combine cornstarch and 1 tbsp. wine; set aside. In a medium saucepan, heat remaining wine to simmering over medium heat. Stir in cornstarch mixture and cheese until smooth. Serve fondue with your choice of dippers
