Gazpacho Bloody Mary

Serves 6
  • 1 medium cucumber, peeled, seeded, cut into 1" pieces
  • 1/3 cup coarsely chopped onion
  • 1/2 red or yellow bell pepper, seeded, cut into 1" pieces
  • 1 clove garlic
  • 1 tsp. prepared horseradish
  • 2 cups tomato juice
  • 1 tsp. kosher salt, divided
  • 1/2 tsp. Kowalski's Coarse Ground Black Pepper, divided
  • - vodka

In a blender container, purée cucumber, onion, bell pepper, garlic, horseradish, tomato juice, 1/2 tsp. salt and 1/4 tsp. black pepper; refrigerate in a large covered pitcher. On a flat plate, combine remaining salt and pepper. Wet the rim of 6 martini glasses; dip each in the salt mixture. Fill glasses with ice; divide Bloody Mary mixture among glasses. Pour in a shot of vodka in each glass; serve each with cocktail stirrer.
