B.T. McElrath's Favorite Drinking Chocolate

Ingredients: 

1/2 cup water

1/2 cup sugar

- pinch sea salt

1/2 cup cocoa powder

3 oz. bar B.T. McElrath Chocolatier 70% dark chocolate bar, broken into small pieces

1/2 tsp. vanilla extract, such as Nielson-Massey

4 cups milk (whole, 2%, unsweetened soy or almond)

Instructions: 

In a small saucepan, combine water, sugar and salt; bring to a boil. Remove from heat; whisk in cocoa powder. Stir in chocolate bar pieces and vanilla; set aside to keep warm. In a medium saucepan, heat milk to 120°; add chocolate mixture to taste. Stir well or whisk for a lightly frothy mixture. Pour into warm mugs; serve immediately. (Note that some solid chocolate will settle to the bottom; stir frequently.)

Good to Know: For best flavor, select a cocoa powder with a high fat content such as Cocoa Barry, Cordillera or Valhrona, with a minimum of 26% cocoa solids.
