B.T. McElrath's Favorite Drinking Chocolate

Serves 4-6
  • 1/2 cup water
  • 1/2 cup sugar
  • - pinch sea salt
  • 1/2 cup cocoa powder
  • 3 oz. B.T. McElrath 70% Dark Chocolate Bar, broken into small pieces
  • 1/2 tsp. vanilla extract
  • 4 cups milk

In a small saucepan, combine water, sugar and salt; bring to a boil. Remove from heat; whisk in cocoa powder. Stir in chocolate bar pieces and vanilla; set aside to keep warm. In a medium saucepan, heat milk to 120°; add chocolate mixture to taste. Stir well or whisk for a lightly frothy mixture. Pour into warm mugs; serve immediately. (Note that some solid chocolate will settle to the bottom; stir frequently.)

Good to Know: For best flavor, select a cocoa powder with a high fat content and a minimum of 26% cocoa solids, such as Cacao Barry, Cordillera or Valrhona.
