Irish Soda Bread

Serves 8
  • 1 ⅔ cups flour
  • 2 tbsp. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup currants
  • 2/3 cup buttermilk
  • 1 egg
  • 1/4 cup melted butter

In a large bowl, combine dry ingredients; add currants, tossing to evenly coat. In a separate bowl, whisk together buttermilk, egg and melted butter. Stir into dry ingredients just until moistened (the batter will be stiff but sticky). Shape batter into a 6" round mound. Make a large "X" 1/2" deep on top of the batter. Bake in a preheated 375° oven until golden-brown and a toothpick inserted in the center comes out clean (25-30 min.). Cool completely before serving.
