Marshmallow Meringue

Makes enough for filling and frosting 1 (8-9") 2-layer cake or for 1 (9-11") tart

4 egg whites

1 ½ cups sugar

1/4 cup cold water

1/2 tsp. cream of tartar

1/2 tsp. kosher salt

2 tsp. vanilla extract


In a double boiler over simmering water, whisk together egg whites, sugar, water, cream of tartar and salt. Heat to 160°, whisking constantly (7-12 min.). Pour hot meringue mixture and vanilla into the bowl of an electric mixer; beat on medium-high until cooled to room temperature and icing is shiny and stiff.
