Cheesecake with Caramelized Apples

  • 1 cup mascarpone cheese
  • 3 tbsp. brown sugar
  • 3 tbsp. unsalted butter
  • 1/3 cup brown sugar
  • 3 Honey Crisp Apples, peeled, cored, sliced
  • 1/2 tsp. Kowalski's Ground Cinnamon
  • 1 Kowalski's Cheesecake

In small bowl, combine mascarpone and brown sugar; refrigerate, covered. In large skillet over medium heat, melt butter; stir in brown sugar until dissolved. Add apple slices; cook, stirring frequently, until the apples release their juices and start to soften (about 5 min.). Sprinkle with cinnamon; continue cooking, turning occasionally until apples have a light crust and are golden-brown (10-15 min.).

To Serve: Divide apple mixture among individual cheesecake slices; top with dollop of brown sugar mascarpone.
