Caramel Apple Bread Pudding

  • 18 Kowalski's Mini Morning Buns (2-3 days old), quartered
  • 1 cup Kowalski's Honey Toasted Pecans, coarsely chopped
  • 1/4 cup butter
  • 1 cup brown sugar, divided
  • 6 eggs
  • 1 pt. half-and-half
  • 1 tsp. vanilla
  • 3 baking apples, peeled, cored, sliced
  • 1/2 tsp. ground cinnamon
  • - caramel sauce, warmed
  • - mascarpone cheese

Arrange morning buns evenly in a 13x9" glass baking dish sprayed lightly with cooking spray; sprinkle pecans on top. In a small saucepan, melt butter and 1/4 cup brown sugar until sugar is dissolved; drizzle over morning buns. In a medium bowl, whisk together eggs, half-and-half, remaining brown sugar and vanilla; pour mixture over entire dish. Refrigerate, covered, at least 2 hrs. to overnight. Toss apple slices with cinnamon; arrange over morning buns. Bake, covered, in a preheated 350° oven 30 min.; uncover and continue baking until browned (15-20 min. longer). Cut into squares; serve with warm caramel sauce and a dollop of mascarpone.
