Rum-Roasted Pineapple

Serves 6
  • 1 large pineapple, peeled, cut into 1/2" slices, cored
  • 1 cup water
  • 1/4 cup Kowalski's Honey
  • 2 tbsp. sugar
  • 2 tbsp. dark rum

In a small saucepan over medium-high heat, combine water, honey, sugar and rum. Bring to a boil, stirring constantly until sugar melts and syrup thickens slightly (about 3 min.). Place pineapple rings on large rimmed baking sheet; cover with syrup. Roast pineapple in a preheated 400° oven 12 min. Turn rings over; roast until tender, turning rings every 5 min. (about 20 min.). Cool slightly on sheet; cut into 1/3" cubes. Serve warm over ice cream, cheesecake, yogurt, etc.
