Eggnog Rice Pudding

Eggnog Rice Pudding

Serves 6

Ingredients

3 cups (about 2 bags) frozen brown rice
1 ⅓ cups eggnog
½ cup brown sugar (or more to taste)
½ cup raisins, plus more for garnish, if desired
1 dash Kowalski's Ground Cinnamon (or more to taste)
1 dash Kowalski's Ground Nutmeg (or more to taste)
- chopped pistachios or chopped toasted walnuts, for garnish, if desired

Directions
  1. Prepare rice according to pkg. directions.
  2. In a small saucepan, combine eggnog and rice; bring to a boil over medium heat.
  3. Stir in sugar and raisins.
  4. Reduce heat to low; simmer for 5 min. or until eggnog is mostly absorbed.
  5. Sprinkle with cinnamon and nutmeg; garnish with nuts and additional raisins, if desired.
