Eggnog Rice Pudding

Serves 6
  • 3 cups (2 bags) frozen brown rice, such as Padma's Easy Exotic

  • 1 ⅓ cups eggnog

  • 1/2 cup brown sugar, or more to taste

  • 1/2 cup raisins, plus more for garnish if desired

  • - dash ground cinnamon, or more to taste

  • - dash ground nutmeg, or more to taste

  • - toasted walnuts, if desired


Cook rice in microwave according to pkg. directions. In a small saucepan, combine eggnog and rice. Bring to a boil over medium heat; stir in sugar and raisins. Reduce heat to low and simmer 5 min. or until eggnog is mostly absorbed. Sprinkle with cinnamon and nutmeg; garnish with nuts and additional raisins if desired.
