Eggnog Rice Pudding

Serves 6

3 cups (2 bags) frozen brown rice, such as Rice Expressions

1 ⅓ cups eggnog

1/2 cup brown sugar, or more to taste

1/2 cup raisins, plus more for garnish if desired

- dash ground cinnamon, or more to taste

- dash ground nutmeg, or more to taste

- toasted walnuts, if desired


Cook rice in microwave according to package directions. In a small saucepan, combine eggnog and rice. Bring to a boil over medium heat; stir in sugar and raisins. Reduce heat to low and simmer 5 min. or until eggnog is mostly absorbed. Sprinkle with cinnamon and nutmeg; garnish with nuts and additional raisins if desired.
