Frozen Peanut Butter Pie

  • 1 ¼ cups skim milk
  • 1/4 cup sugar
  • 2/3 cup peanut butter
  • 1/2 tsp. pure vanilla extract
  • 1/2 cup cream cheese, room temperature
  • 8 oz. sugar-free whipped topping
  • 8" prepared chocolate cookie crumb crust
  • 3 tbsp. finely chopped roasted peanuts
  • 1/4 cup grated milk chocolate

Combine milk and sugar in a medium saucepan over medium heat; cook and stir until sugar dissolves. Remove from heat; add peanut butter and vanilla and stir until combined. Chill in refrigerator 30 min. Using an electric mixer, beat cream cheese in a medium bowl until light and fluffy. Add peanut butter mixture; beat on low speed until combined. Fold in whipped topping; pour into crust. Freeze until hard (at least 4 hrs.). Sprinkle with peanuts and chocolate; keep frozen until ready to serve. Allow pie to stand at room temperature 10 min. before slicing and serving.
