Honey Pecan Granola with Dried Fruits
Ingredients
A note about gluten: When gluten-free oats are used, this recipe is gluten free.
  4 cups
old-fashioned oats
  
                                  
  2 cups
sweetened shredded coconut
  
                                  
  2 cups
chopped pecans
  
                                  
  1 ¼ tsp.
kosher salt
  
                                  
  ¾ cup
canola oil
  
                                  
  ½ cup
Kowalski's Pure Honey
  
                                  
  1 cup
chopped dried cherries
  
                                  
  1 cup
chopped dried dates
  
                                  
  1 cup
chopped dried apricots
  
                                  
  1 cup
golden raisins
  
                                  
  ½ cup
raisins
  
                      Directions
          - Preheat oven to 325°.
 - In a large mixing bowl, toss together oats, coconut, pecans and salt.
 - In a small mixing bowl, whisk together oil and honey; pour over granola mixture, stirring until well coated.
 - Pour onto a large rimmed baking sheet; bake in preheated oven until granola is golden-brown (about 35 min.), stirring 1-2 times.
 - Remove from oven; cool on pan for 45 min.
 - Stir in fruit.
 - Store in an airtight container at room temperature for up to 3 weeks. Serve alone or with milk or yogurt.
