Honey Pecan Granola with Dried Fruits

Serves 16

4 cups old-fashioned oats

2 cups sweetened shredded coconut

2 cups chopped pecans

1 ¼ tsp. kosher salt

3/4 cup canola oil

1/2 cup Kowalski's Pure Honey

1 cup chopped dried cherries

1 cup chopped dried dates

1 cup chopped dried apricots

1 cup golden raisins

1/2 cup raisins


In a large mixing bowl, toss together first 4 ingredients. In a small bowl, whisk together oil and honey; pour over granola mixture, stirring until well coated. Pour onto a large rimmed baking sheet; bake in a preheated 325° oven until granola is golden-brown (about 35 min.), stirring 1-2 times. Cool on pan 45 min.; stir in fruit. Serve alone or with milk or yogurt; store in airtight container at room temperature up to 3 weeks.
