Basic Vinaigrette

Makes about 1 cup

Ingredients

3 tbsp. top-quality vinegar (such as balsamic or Champagne)
1 tbsp. Dijon mustard (optional)
1 tbsp. minced shallots (optional)
¾ tsp. kosher salt, plus more to taste
¼ tsp. freshly ground Kowalski's Black Peppercorns, plus more to taste
½ cup Kowalski's Extra Virgin Olive Oil
1-2 tbsp. freshly chopped herbs, such as parsley, dill and chives (optional)

Directions
  1. In a medium mixing bowl, whisk together vinegar, mustard, shallots, salt and pepper.
  2. Drizzle in oil, very slowly, whisking constantly to form an emulsion.
  3. Whisk in herbs, if desired; adjust seasoning to taste.
