Blue Cheese Dressing

Very Easy
Makes about 2 cups
  • 8 oz. soft-style tofu, rinsed, drained
  • 1/3 cup buttermilk
  • 2 tbsp. fresh squeezed lemon juice
  • 2 tbsp. safflower oil
  • 2 tbsp. finely minced onion
  • 1 tsp. minced garlic
  • 3/4 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 4 oz. crumbled blue cheese

Purée tofu in a food processor bowl until creamy; add remaining ingredients except blue cheese and process until thoroughly combined. Stir in blue cheese. Refrigerate at least 8 hrs. to blend flavors.
