Lentil Stew with Smoked Turkey Sausage
3 tbsp. olive oil
16 oz. pkg. Kowalski's Fresh Soup Mix
3 tbsp. flour
8 cups chicken broth
1 bay leaf
1/2 tsp. dried thyme
1 ½ cups dried lentils
1 tsp. kosher salt
1/2 tsp. Kowalski's Coarse Ground Black Pepper
12 oz. smoked turkey sausage, sliced
In a large saucepan over medium heat, heat oil; cook soup mix until softened (about 10 min.). Whisk in flour; cook 2 min. Pour in broth; add bay leaf, thyme, lentils, salt and pepper. Bring to a boil; reduce to simmer. Cook until lentils are tender (65-75 min.); stir in sausage; heat through.
Good to Know: Kowalski's Fresh Soup Mix is available in the Produce Department. Or you can use approximately 3 cups of finely chopped mixed vegetables, such as carrots, celery, onions, leeks and parsnips.
