Mini Date and Blue Cheese Balls

Very Easy
Makes 18-20 balls
  • 8 oz. cream cheese, at room temperature
  • 4 oz. crumbled blue cheese, at room temperature
  • 1 tbsp. milk
  • 8 Medjool dates, pitted and minced
  • 2 tsp. honey
  • 1 tsp. grated lemon zest
  • 1/4 tsp. fresh ground black pepper
  • 1 tbsp. minced fresh Italian parsley
  • 1 tbsp. minced fresh Italian parsley

Beat together first 4 ingredients using an electric mixer until completely smooth. Fold in next 4 ingredients; chill several hours. Scoop up a rounded tablespoon of cheese mixture; using your hands, quickly and lightly form into a ball about 3/4" in diameter. Repeat with remaining mixture; roll balls in chopped nuts. Serve on a 4" bamboo skewer.
