Pronounced meer-PWAH, this classic French cooking base is made from diced onions, carrots and celery. The traditional ratio is two parts onion to one part carrot and one part celery. Use it to add delicious depth to soups, stews, stocks, sauces and braises. It's also a great choice for adding flavor to casseroles and roasted meat dishes, like our recipe for Stuffed Mushroom Pasta.
 

Soup Mix

Our chunkier take on mirepoix, our Soup Mix adds tender parsnip and crisp green onion textures to the blend. Try it in our recipe for Apple Brie Soup.
