Huxley Energy Drinks

Huxley was born out of founder Simon Solis-Cohen's frustration with traditional energy drinks – too sugary, too artificial, and too intense. As someone who wanted a gentle, natural boost, Simon set out to create something better: an energy drink that felt good to drink and tasted great, too.

With a culinary background that began in his grandmother's garden and took him from the Culinary Institute of America to some of the country's most prestigious kitchens, Simon has a deep respect for quality ingredients. In 2021, he teamed up with Bethany Schippel, a key partner who helped bring structure and strategy to his vision. Together, they launched Huxley in March 2024 in Minneapolis.

Made with real fruit juice and powered by cascara superfruit, Huxley delivers clean, plant-based energy without the crash. Their beverages are infused with electrolytes for hydration and L-theanine for focus.
