Northern Crayfish Company was founded by native Swede Martin Hallkvist, who was born and raised on the shores of Lake Vättern, Sweden's second-largest lake. Known for its large crayfish, Lake Vättern is renowned throughout Sweden, where its prized crustaceans are highly sought after in markets and grocery stores. As a teenager, Hallkvist spent most of his summers trapping crayfish commercially for local fishermen. When he later started Northern Crayfish Company in the U.S., the work came naturally to him.
In the U.S., crayfish are most commonly associated with commercial farming in Louisiana, but Northern Crayfish Company, which operates out of Afton, Minnesota, aims to change that perception. Using modified boats and specialized gear, the company has developed expertise in both trapping and cooking wild-caught crayfish from the deep, rocky lakes of northern Minnesota. Their team is highly selective when sourcing crayfish, requiring each one to pass a series of quality checkpoints before it is accepted.
