Pepper-Avocado Salsa

Makes 2 ½ cups

Ingredients

⅓ cup chopped red bell pepper
⅓ cup chopped yellow bell pepper
⅓ cup chopped orange bell pepper
1 bunch green onions, sliced
1 jalapeño pepper, seeded and diced
1 avocado, peeled and cubed
1 oz. fresh cilantro, chopped (about ¼ cup)
1 tbsp. minced garlic
¼ cup Kowalski's Freshly Squeezed Lime Juice (from the Produce Department)
2 tbsp. Kowalski's Extra Virgin Olive Oil
2 tbsp. superfine sugar
1 tsp. kosher salt
1 tsp. freshly grated lime zest

Directions
  1. In a medium mixing bowl, combine first 8 ingredients (through garlic); set aside.
  2. In a small mixing bowl, combine remaining ingredients.
  3. Pour dressing over pepper mixture; gently stir to combine.
  4. Refrigerate for several hours before using. Try it in our recipe for Fish Tacos!
