Combine beef with marinade in a large mixing bowl; toss to coat. Cover; chill 30 min. or up to 3 hrs. Heat 1 tbsp. oil in a large nonstick skillet over medium-high heat. Add rice; pat out in an even layer. Cook, without stirring rice and rotating skillet occasionally for even browning, until rice is golden and crisp on bottom (about 15 min.). While rice crisps, heat remaining oil in an extra-large skillet over medium-high heat. Cook beef, turning once, until cooked through and lightly browned (about 3 min.). Divide rice among serving bowls; top with beef, desired mix-ins and eggs. Serve immediately.
