                      Directions
          - Fill 2 chilled lowball glasses with ice; set aside.
- Add bourbon, lemon juice, simple syrup and egg white(s) to a cocktail shaker; shake vigorously to combine (about 30 sec.).
- Add ice to nearly fill the shaker; shake again until drink is cold and foamy.
- Strain mixture into prepared glasses; add a few drops of bitters, if desired.
- To float the wine, turn a cocktail spoon upside down over one of the drinks; with the tip of the spoon barely touching the foamy layer, slowly pour ½ of the wine over the spoon. Repeat with the other drink.
- Garnish each drink with a piece of orange and a cherry.
