These tender roasted bell peppers are filled with a savory mix of ground chicken, tender vegetables and the rich, aromatic warmth of Kowalski's Korma Simmer Sauce. The result is a creamy, mildly spiced comfort-food twist on a classic stuffed pepper.
Ingredients
Dietary note: To make this recipe vegan, substitute 14 oz. canned chickpeas for the ground chicken, cooking until lightly browned and heated through (about 5 min.).

Kowalski's Korma Simmer Sauce (from the Global Foods Section)

Kowalski's Cauliflower Florets (from the Prepared Produce Section), cut into bite-size pieces

- cooking spray, for spraying the baking dish

Minnesota Grown bell peppers (any color), sliced in half lengthwise, seeds and membranes removed
- minced fresh Minnesota Grown cilantro and lime wedges, for garnish (optional)
Directions
- Preheat oven to 350°.
- In a large sauté pan, heat oil over medium heat. Add onion and garlic; cook, stirring occasionally, until onion is soft and translucent (about 5 min.).
- Add chicken; cook and crumble until golden-brown and nearly cooked through (about 5 min.).
- Add turmeric, ginger, salt and black pepper; stir and cook for 1 min.
- Remove from heat. Add simmer sauce, cauliflower, peas and rice; stir to combine.
- Spray the bottom of a 9x13″ baking dish with cooking spray; arrange bell pepper halves in dish.
- Divide filling evenly among pepper halves; bake in preheated oven until peppers are fork-tender and filling is bubbling (about 25 min.).
- Remove from oven; serve stuffed peppers with cilantro and lime wedges, if desired.
Tasty Tips:
- Any precooked rice works well in this recipe. If using freshly cooked rice, let it cool before adding it to the filling.
- No need to thaw the frozen peas or rice! Just add them straight to the filling.
- Minnesota Grown products are fresher by miles, which is why we recommend them in this recipe. When local options are unavailable, fresh produce grown elsewhere may be used.
