Everything-Crusted Pork Tenderloins

Ingredients

1 cup Kowalski's Black Raspberry Jam
¼ cup Kowalski's Fig Balsamic Vinegar
2 Kowalski's Naturally Raised Pork Tenderloins (about 2 lbs. total)
- kosher salt and freshly ground Kowalski's Black Peppercorns, to taste
- Kowalski's Everything Bagel Seasoning, to taste

Directions
  1. Preheat oven to 400°.
  2. In a small microwave-safe mixing bowl, whisk together jam and vinegar.
  3. Warm jam-vinegar mixture in the microwave until loose and slightly warm (15-30 sec.); set aside.
  4. Season pork evenly with salt and pepper.
  5. Brush tenderloins on all sides with a few teaspoons each of jam mixture; sprinkle evenly all over with seasoning mixture to completely coat.
  6. Transfer tenderloins to a rack set in a roasting pan; roast in preheated oven until pork reaches an internal temperature of 140° (20-25 min.).
  7. Remove from oven; tent with foil and let rest for 10 min. (Pork should increase to 145° before serving; pork is safe to eat even if slightly pink in the center.)
  8. Slice tenderloins; transfer to a serving platter.
  9. Drizzle with jam mixture to taste. Serve pork with unused jam "sauce" for passing at the table.
