This rustic Italian-inspired panzanella salad features toasted ciabatta bread, crisp radicchio, briny olives and warm cannellini beans. Its bold flavors and hearty textures bring a satisfying twist to a classic favorite.
Ingredients
1 loaf
Kowalski's Signature Artisan Ciabatta Bread, cut or torn into 1-1 ½" cubes
½ cup
Kowalski's Extra Virgin Olive Oil, divided
- kosher salt and freshly ground Kowalski's Black Peppercorns, to taste
1 can
(14-16 oz.)
cannellini beans, rinsed and drained
½ cup
Kowalski's Italian Vinaigrette Salad Dressing
1 cup
chopped Castelvetrano olives
4 oz.
radicchio, torn
½
red onion, thinly sliced into half moons
¼ lb.
Kowalski's Israeli Feta, crumbled
- torn fresh basil, for garnish (optional)
Directions
- Preheat oven to 425°.
- In a large mixing bowl, toss bread cubes with 3-4 tbsp. oil to fully coat; season with salt and pepper to taste.
- Spread bread cubes on a parchment-lined baking sheet; bake in preheated oven until lightly browned and toasty (about 15 min.).
- Remove bread cubes from oven; set aside to cool completely.
- In a large skillet, heat 1 tbsp. oil over medium heat. Add beans; cook until warmed through (4-5 min.).
- Season beans with salt and pepper; remove from heat and set aside.
- In a small mixing bowl, whisk Italian dressing with remaining oil.
- In a large salad bowl, combine toasted bread cubes with warm beans, radicchio, olives and onion; drizzle with dressing and toss to coat.
- Top with feta; season with salt and pepper to taste.
- Garnish with basil; serve immediately.
Tasty Tips:
- Kowalski's Signature Artisan Sourdough or Focaccia can be substituted for the ciabatta bread.
