A winter twist on a classic salad, this version pairs sweet roasted grapes and chewy dates with crisp greens and familiar Waldorf-inspired flavors. It’s sweet, savory and full of satisfying textures.
Ingredients
2 cups
red seedless grapes
1 tbsp.
Kowalski's Extra Virgin Olive Oil
½ cup
low-fat plain yogurt
1 tbsp.
sugar (or Kowalski's Pure Honey)
5 oz.
baby spring mix
2 cups
chopped Granny Smith apples
1 cup
(about 2 ribs)
chopped celery
½ cup
chopped dried dates
½ cup
pecan halves, toasted
- kosher salt and freshly ground Kowalski’s Black Peppercorns, to taste
Directions
- Preheat oven to 400°.
- In a large mixing bowl, toss grapes with oil.
- Arrange grapes in a single layer on a parchment-lined baking sheet; bake in preheated oven until grapes are soft and slightly charred (15-20 min.).
- Transfer grapes to a plate; set aside to cool.
- In a small mixing bowl, whisk together yogurt and sugar; set dressing aside.
- In a large salad or mixing bowl, combine spring mix with cooled roasted grapes, apples, celery, dates, pecans, salt and pepper.
- Drizzle salad with dressing; gently toss to coat. Serve immediately.
Tasty Tips:
- Substitute any lettuce for the greens called for in this recipe.
- Walnuts can be used in place of pecans in this recipe.
