Ingredients
3 tbsp.
Kowalski's Extra Virgin Olive Oil
14 oz.
Kowalski's Fresh Soup Mix or Mirepoix
3 tbsp.
flour
8 cups
low-sodium chicken broth
1 ½ cups
dried lentils
1 tsp.
kosher salt
½ tsp.
freshly ground Kowalski's Black Peppercorns
½ tsp.
dried thyme

bay leaf

smoked turkey sausage, sliced
Directions
- In a large saucepan, heat oil over medium heat; cook soup mix until veggies are softened (about 10 min.).
- Whisk in flour; cook for 2 min.
- Pour in broth. Add lentils, salt, pepper, thyme and bay leaf; bring to a boil.
- Reduce heat to low; simmer until lentils are tender (65-75 min.).
- Remove bay leaf. Stir in sausage; heat through.
Tasty Tips:
- Any flavor or type of smoked sausage will work in this recipe.
- Red and yellow lentils naturally break down to a creamy consistency as they cook, making them a great choice for this recipe. Brown or green lentils may also be used for a more textured stew. Black lentils are not recommended.
- Make a vegetarian stew by swapping in vegetable broth and eliminating the sausage. These changes will also significantly reduce the fat, sodium and calorie content of the recipe.
