julienne-cut sun-dried tomatoes in olive oil and herbs, drained, 2 tbsp. oil reserved

garlic, minced
1 tsp.
dried oregano
1 tsp.
kosher salt, plus more for seasoning
½ tsp.
freshly ground Kowalski's Black Peppercorns, plus more for seasoning
2 tbsp.
tomato paste
8 cups
chicken broth
4 oz.
Kowalski's Imported Italian Organic Artisan Pipe Pasta
1 lb.
shredded Kowalski's Signature Rotisserie Chicken
2 cups
fresh spinach
½ cup
heavy cream
¼ cup
grated Kowalski's Parmesan Cheese, for garnish (optional)
- Kowalski's Artisan Bread Croutons, for garnish (optional)
Directions
- In a large stockpot, heat reserved sun-dried tomato oil over medium-high heat.
- Add mirepoix, garlic, oregano, salt and pepper; cook and stir until vegetables are tender (about 5 min.).
- Add tomato paste; cook for 2 min.
- Add broth, pasta, chicken and tomatoes; bring to a boil.
- Reduce to a simmer; cook until noodles are al dente (10-15 min.).
- Stir in spinach and cream; cook until hot and spinach has wilted. Adjust seasoning to taste.
- Garnish individual servings with Parmesan cheese and croutons; serve immediately.
Tasty Tip:
- Kowalski's Extra Virgin Olive Oil can be used if sun-dried tomatoes are not packed in oil.
