Raspberry Pepper Sandbakkels

Ingredients
8 oz. mascarpone cheese, at room temperature
1 pkg. Kowalski's Sandbakkels (available seasonally in the Bakery Department)
6 oz. fresh raspberries
3 tbsp. Janet's Finest Raspberry Jalapeño Compote (from the Specialty Cheese Department)
- fresh basil, very thinly sliced, for garnish
Directions
  1. Scoop mascarpone into the corner of a zip-top plastic bag; snip corner of bag and squeeze an equal amount of cheese into each sandbakkel.
  2. In a small mixing bowl, use a fork to lightly smash raspberries into jam.
  3. Spoon 1-2 tsp. raspberry filling on top of cheese in sandbakkels; garnish with fresh basil.

 

Tasty Tip:

  • When Kowalski's Sandbakkels are not available, substitute another sweet, buttery base, such as a mini shortbread cookie.
