Tropical Grilled Pineapple Dessert

Ingredients
1 large pineapple, peeled, cored and cut into 8 wedges
- coconut oil or Kowalski's Extra Virgin Olive Oil
¾ cup plain Greek yogurt
- Kowalski's Pure Honey, plus more for drizzling, if desired
8 tsp. toasted sweetened coconut flakes
8 tsp. roughly chopped macadamia nuts
Directions
  1. Preheat grill to high heat.
  2. Lightly brush pineapple wedges with oil; grill on preheated grill, covered, until pineapple is nicely charred (about 6 min. per side).
  3. In a small mixing bowl, whisk yogurt with honey to taste; set aside.
  4. Divide pineapple between 4 serving dishes or plates; top each serving evenly with yogurt, coconut and nuts.
  5. Drizzle with honey; serve immediately.
